Sous Vide son zamanlarda Molecular Gastronomy Mutfağının popüler tabaklarından biri. Kısaca anlatmak gerekirse, yiyeceklerin vakumlama yoluyla havası tamamıyla alınmış torbaların içinde düşük ısılarda, protein bağlarını kırmadan uzun sürede pişirme yöntemidir.
Burada amaç malzemenin asıl tadına ulaşmak. O yüzden burada malzemenin gerçekten ORGANİK olması gerekiyor, yoksa beslenme/gübreleme esnasında kullanılan antibiyotik ve diğer kimyasal tadlar bir anda ortaya çıkıyor.
Çok zor ve meşakkatli bir işlem gibi gözüksede aslında çok basit, tekrar söylüyorum, gerçekten organik olmayan bir besinle bunu denemeyin, yoksa büyük sürprizle karşılaşabilirsiniz
